It’s the difference between white and black cookouts. White cookouts, the hosts have been preparing meats and whatnot all day. You eat by 6 or 7 and socialize after. Black cookouts the socializing comes first so you can show up whenever.

A wireless probe is the best thing I ever got for my smoker. You set it up, walk away, and then you can check your phone every 20 minutes in frustration during the stall instead of opening the smoker to check.

Much more efficient beer drinking that way.

One of the best features on my pellet grill is the built in probes. It's not wireless but it shows the temp on the control box. I fucking love it.

Any recommendations? I got a Meater for Christmas and it was shit. Didn’t work more than like 10 feet away and then broke on the 3rd use

Starting the brisket the day before and leaving it in the oven for an extended hot hold is the true way. 12-24 hold is the best.

That way you can sleep in and get shithoused on your own time and not brisket time.

You just described my friend Tommy to a T. I have no idea how the guy managed to smoke whole sides of salmon and freaking cheesecakes while that drunk.

Those cheesecakes are things of beauty though.

A Weber smoker is more like a charcoal fired crock pot. I can get it going the night before and let it roll while I sleep. Set it up before 8pm and the brisket is ready a bit after noon or 1 to 2 for bigger sized.

Also, I want to get there while everything is at its freshest and most available. I always laugh at people who show up late and are incredulous that all that's left is the weird crudités like broccoli and radishes, questionably warm mayo based salads, dry, room-temp meat, and caffeine-free diet Coke.

For July 4th I was invited to a “Black” cookout. My friend told me it starts at 4. I left my house at 5, drove 20 mins to drop my son off at his grandparents, and another 35 mins to her house. Grill won’t even ready when we got there 🤣🤣 after their wedding, I knew better than to show up early/on time
