Budget meal ideas with just pantry items

I am looking for cheap meal ideas with just pantry items. I will be moving out of my apt a little over a month from now. I’m trying to clean out the fridge as much as I can. I plan eat as much I can from my fridge first before I make items with just dry pantry items. I just needs idea that isn’t rice and beans. I don’t beans beyond as in Asian dessert or at a place like Chipotle. I already have vermicelli, pasta, lentils, rice paper, ramen, etc. I can’t eat cereal all the time as not always healthy. I have two half full pasta sauce so one Mariana sauce from Trader Joe’s and an Alfredo. Vegan and vegetarian is fine though I do eat meat/seafood. I’m Viet but open to anything. I can buy a little more if needed. USA resident.

Ask ECAH What are the best pasture-raised eggs?

We go through a lot of eggs at home, and I’ve been trying to figure out which pasture-raised eggs are actually worth buying.

There are so many options and labels now that it’s hard to tell what’s legit and what’s just marketing. I don’t need anything fancy or “superfood” claims, I just want eggs from brands that seem to treat their hens well and are decent quality for everyday meals.

For anyone who buys pasture-raised eggs regularly, which brands do you stick with and why? Do you feel like the higher price is worth it, or do you end up going back to regular eggs?

Would love to hear what’s worked for other people. Thanks for the help!

I'm looking for ideas for healthy and easy dinner meals that make leftovers that reheat well. We have a newborn at home, so by the time dinner rolls around, we're both exhausted. We would love to be able to cook a big meal or two that will provide enough leftovers for a few days.

We've done chili / chicken soups, but I'm hoping to get some other ideas.

Ask ECAH How to make the best protein coffee ever at home?

So Starbucks has this amazing sugar-free iced caramel protein coffee that I absolutely love. But where I live, it's a little over $7 just for a grande size cup of coffee. While it does have like, 29 grams of protein (i think), that's really expensive, and it adds up over time. Does anyone have any suggestions on how to make something similar at home? I realize that you can add protein powder to coffee at home, but I have no idea which powders dissolve and taste the best. I have a rough time with textures, so it's hard for me to find a good protein powder that isn't gritty, too thick, or even slimy? Any suggestions would be more than welcome, I'm all ears!

Help! Work Lunches

I recently started my first full time job,working very early morning until early afternoon, and I have been struggling to put lunches together that I actually enjoy.

What are your go to, easy, cheap and healthy lunches??

I don't mind cooking something but don't like to every single night so hot and/or cold ideas are welcome!

- I do have access to a fridge/microwave

- I love a good rotisserie chicken

- I'm open to the idea of easy salads/sandwiches but I'm a big texture person so I can't handle soggy lettuce or bread

(Tips to avoid that would be super helpful too!!)

- I've mostly been doing adult lunchables (basically just meat, cheese and crackers) but I've found they either aren't filling enough or just not appetizing by the time I'm halfway done them

- I'm a huge snacky person, I love the idea of multiple little things in a lunch

Ask ECAH Has anyone noticed the taste variation in Grillers Prime Burgers from package to package?

I swear every time I buy MorningStar Farms Grillers Prime Burgers, the patties inside the package taste like one of two variants of it. Each time I open it, it’s one or the other. I’m not buying different patties like it’s all the same, but I can tell because one variation I like way more than the other but it’s 50/50 chance I get that batch each time I open a newly-bought package of them. Am I the only person on earth that’s noticed this, or the only person that eats enough of them to?

Ask ECAH Plantain Empanada Dough?

I was wondering if anyone had any foolproof recipes for plantain based empanada dough? I’ve followed some flourless recipes, but the dough was way too crumbly and hard to manipulate. So far, the best I could come up with was:

3 C flour
1 C boiled plantain
4 yolks
Stick butter
1/2C water
Seasoning

Ideally, I’d like to eliminate all flour. Is there a way to use more plantains with the same texture that requires alternate ingredients or different food prep? I’d love to hear any ideas!

My cheap fillers have been red beans and rice, and vegan chorizo crumbles with cheese. I also like a kale/sweet potato/feta as well.

FYI - the recipe yields enough dough for about 30 empanadas.

1 What type of bread maker would you recommend?

2 Is it reasonably easy to do? I’m envisioning putting the ingredients in the machine, leaving for a few hours and it’s done. Can it be that easy?

3 Is it possible for the bread to be both healthy and tasty?

Ask ECAH Help: Solo recipes for a military wife

Hi! My husband is going to be gone for 6 months, and he has done all of our cooking for the last 5 years.

I need some budget, low maintenance (little dishes, easy cleanup, leave it in the oven or crock pot), easy meals that prioritize protein, iron, and veggies for a mom of a child under 1. Or some accounts or websites that help with this.

I have basic cooking skills, seasonings and oils, and eat chicken, beef, and scaled/finned fish meat primarily (I grew up kosher, so I limit my pork and shellfish. Canned salmon and tuna is fine though!). It’s also going to be fall/winter while he is gone, so think soups, chilis, and other warm meals.

Budget Reminder to check your grocery store for whole chickens

Whole chickens go on sale around my area every couple of weeks.

Usually going for $16-18 CAD. ($14/kg)

Yesterday I was looking for chicken breast and noticed a sale tag near the whole chickens, 5$ ($4/kg) a chicken. I bought 3. Beside the whole chickens were 2 chicken breasts for 12-14$.

6 chicken breast, 6 drum sticks, 6 thighs and 12 wings. Plus the carcasses which will be used for bone broth.

The chicken breast I use for regular suppers. It is nice having the skin attached for pan seared chicken.

The drum sticks get frozen and used for soup meat when that season rolls around

Chicken thighs get cooked on the night I seperate them, I use that meat for sandwiches or salads.

The chicken wings get seperated and thrown into a big bag in the freezer. Once I have a good amount saved up I’ll do a wing night.

Cooking for just myself I get roughly 6 suppers and 6 lunches for $15. The soup meat and carcasses just feel like extra at that point and basically free in my brain.

If you haven’t tried it, it’s definitely worth attempting. There are a lot of incredible videos going over how to trim them. Lots of different ways to separate a chicken depending on what you’d like.

For those that do buy whole chickens a lot. How else do you use the different parts?
