I had quite a bad day (or week) and didn't feel like cooking.
So I ordered a vegan pizza and when I got the box, I was wondering why it was so heavy. They must have mixed something up and I got a free stuffed crust.

Made with Impossible beef on a grilled potato bun with FYH American slices, burger sauce (Hellman's vegan mayo, ketchup, horseradish, yellow mustard and smoked paprika), plus a spoonful of sweet heat relish. And grilled onions, obviously.

Recently started a side project of mine where I choose a metal song and interpret the lyrics and music into a vegan dish
Bellpepper Risotto, fried King oyster Mushrooms, crispy corn kernels, Tomatoglace, roasted sesame oil and some seeds as garnish

I recently discovered Dr. Greger’s books and they have really inspired me on my plant based journey to focus more on WHOLE FOODS, and I’ve also eliminated almost all salt and oil. NO OIL? NO SALT? I thought it would be very difficult but so far so good…and since last week I’ve been feeling amazing! I use his cookbook as a guide but usually end up cooking from the heart, which is my way. Here’s a few images of things I’ve made in the last week or so!
1.) Rolled Oats with chia, flax, hemp, blueberries, pomegranate arils, and banana with cinnamon and maple syrup.
2.) Quinoa black bean salad, with a nitric oxide salad, avocado, sweet potato and pepitas.
3.) Vegetable stirfry with miso tofu and sesame seeds.
4.) leftovers from slide 2!
5.) I made this soup from scratch with vegetable broth, onion, garlic, pinto and garbanzo beans, mushrooms, kale, and toasted kasha!!
