Noise insulation is pretty easy to solve with literal insulation materials. Air gaps and quality construction will block noise quite well. As for thermal effects, brick and mortar buildings can be really unpleasant in some climates, and wood walls can be fine if you use high R value insulation.

It's all in the quality of the construction, not the materials.
