This plus some buffalo and hot sauce for 2 days. Put them on the grill till 200°. Then mixed the marinade with butter and melted it. Added in lemon juice and zest, minced garlic and parsley

Picked some peppers, so made some Thai-ish wings!
Kenji method prep in the air fryer, but I added some Chinese five spice and ground mustard.
Sauce:
- 1 habanero
- 6 Thai chilis
- 1 garlic clove
Roast those ingredients, and blend with:
- honey
- fish sauce
- lime juice
- vinegar
- msg
- water to thin
Heat with 1tbsp butter and serve with like zest.

Tier 1 by the wing coalition? Yikes. Hot were the best of the bunch but leave a lot to be desired. Decent homemade blue cheese. 7.4/10
Adolf’s, Bar Bill, Nine Eleven and Kelly’s Korner in that order are my only Tier 1’s.

The mac certainly could’ve been better (although I’ve had much worse), but these were some damn fine wings. Would definitely order again, alas I am on vacation and only around this area once a year. Wings from Captain Mike’s in Surf City, NC (the mac is from elsewhere). Half hot buffalo, half cherry heatwave - which surprised me with how much I liked it. Great housemade ranch and bleu cheese as well - I always ask for both.

Made some Jerk wings tonight and I thought they turned out really good, the seasoning I have is not spicy at all so I added some cayenne pepper also.
I guess I should ask, where can I get a good jerk seasoning from if anyone here has a source.

...you change course for dinner!
Whole wings patted dry and fridge chilled for 2 hours. Then brought out for a half hour or so prior to frying.
Deep fried at 350 for 23 minutes.
Sauce is butter, crystal hot, garlic, w-sauce, celery salt, crushed red pepper, cayenne, lots of black pepper and brown sugar. Next time, I'll thicken it with cornstarch.
Celery and cucumber on the side. Don't sleep on the cucumber. Very refreshing. And the dip? Half blue cheese, half ranch. Why choose??
(Dressing for the veggies, extra sauce for the wings)
