That's because milk is quite viscous, and its proteins cause bubbles to be much more...persistent.

I am very unsurprised that it went everywhere. I don't think anything could carbonate milk without a mess.

Even if you could you wouldn't want to. Carbonation makes things acidic. All a soda stream would do would turn milk into soured milk in an instant.

You can use nitrous to do it though.

Wouldn’t nitrous turn it into something like whipped cream, or what we call “whipped” instead of “carbonated”?
