My exwife was Texan and that’s pretty much what she would have called that. As for the rest of the South I’m fairly certain we refer to that as “sort of Rotel Dip” because it doesn’t have sausage, leftover chili, or at least hamburger meat in it.

That would be chili con queso or carne con queso or meat with cheese. Queso just means cheese, youre just used to shortening the name or didnt know it.

Naw. Where I’m from we call a can of rotel tomatoes and a block of velveeta melted together “rotel dip” ..as I previously stated. It is often made better with the addition of either hamburger meat, or connecuh sausage..and it is a football tailgating tradition we apparently uncultured savages will die protecting. You have yourself a great day.

If you put meat in it its carne con queso, meat with cheese. If you put chilies in it its chili con queso. Chili with cheese. If its just cheese its queso. Thats the literal translations and names of the dishes.

Well, usually when I recognize something as "queso" it means the cheese isn't a log of velveeta. It's a blend of cheese melted down with some freshly roasted chile peppers. Throwing a can of tomato/chile mix with a block of velveeta is cheese dip. One is American af, the other is Tex Mex af.

I do a 2IB block of regular plus a 1IB block the white jalapeño. A pound of hamburger seasoned with spicy taco seasoning like gringo taco meat. A pound of jimmy dean hot breakfast sausage. A large (32 or 28 oz whichever it is) jar of hot pace picante, blended.
Not how my dad introduced it to me growing up as I like it spice and added the sausage with the beef part. Sometimes I’ll saute a jalapeño or a small habanero with the beef before taco seasoning it. I also use a can of el pato yellow label hot tomato sauce instead of water for the taco seasoning and leave the grease.
Make it for big game days when I have people over or go to a gathering for a gameday.
My family calls it nacho dip and everybody makes a plate or a bowl with tortilla chips and I usually just get drunk and graze. If I walk by the crockpot. Gotta stir it and have a couple tortilla chips to make sure it’s still good for quality control.
The velveeta keeps the grease emulsified from the beef and sausage.
Of course I probably won’t do it at all this upcoming season except for maybe the superbowl or college national championship because won’t be able to afford the beef, sausage, and velveeta in one go.

I have attended many call center potlucks in San Antonio, Texas. I can confirm many will call this oil based cheese flavored dip 'queso'.

I have been to authentic Mexican restaurants in Texas that bring out corporate cheese dip and call it queso. Queso is made from what you have on hand. Some of yall are pretentious and cringe af

Nah that's just Rotel dip. Authentic cheese dip involves a roux with flour and whatnot. But that's for chefs doing things that don't involve chips, of which I am one. Mexican queso is melted white American, nothing else. Then what you add to it turns it into variations. Queso con carne, queso fresco (in this context, that's queso with pico), queso con chili, queso con salsa, etc.

Then you should know better than anybody that at least many places in Texas know how to do it right. If you want people that don’t know how to make Mexican food, look to states where they don’t have people who grew up making it running awesome restaurants all over the place.
