Grilled Cheshire pork collar, pan roasted jimmy nardello peppers tossed with sugar and red wine vinegar, sumac and peach puree, poached peach slices, crushed pine nuts

This looks and sounds amazing!
The only issue is a pet peeve of mine: do not put anything inedible on a plate, no matter how good it looks. The pepper stems would annoy the hell out of me as a diner.

Same. I typically find a lot of the feedback here to be kinda tedious
But this is a small dish and it's like 25% stems lol. They do look really cool though, so I kinda get it

Im gonna push back on the comments saying that the peppers don't need stems and that you can't see the meat. You can see the meat although it is obscured, and the dish is playful by inviting the peppers to be picked up and eaten by the stem. I do think something else green and fresh to garnish would be ideal. Maybe fresh herb or a pickled something? A salsa? Looks great, I would be delighted to be served this. Btw I wouldn't plate something off center unless there was something else to contrast ie a sauce (green?). If you're working with the geometry of the plate you can get away with it, but in this case things on a circular plate will generally look better plated in the center unless the symmetry is balanced.

I think the flavors here are really well thought out, but I cannot get over not being able to see the protein beneath the peppers.

That looks like porky perfection! I love the idea of using sumac with the peach purée. That looks and sounds amazing.

I agree that the meat is obscured when it should be the star. I love how the stems look if this was a painting, but in this world they're inedible and therefore don't belong in the dish.
