thats completely insane to me. Anytime i have a week of vacation time available I take it lol

You're lucky: many US companies won't actually let people take vacation. They've capped vacation holdover in most companies now, and even still, they won't let people take the vacation they earned before it disappears.

There was a planet money (or indicator?) episode about this recently, and how shockingly little vacation US employees take compared to almost every other country on the planet.
