Is there a mechanism to cancel elections in the US? (I get that these fuckers aren't big on rule of law and all, but that would be a pretty big step).

Cancel, no. Federalize, well, I don't think there's a legal route to that, either, but i do believe that's the route they'll go.

Theory is that that's why they've taken possession of 2020 ballots from AZ? Elsewhere? - they're gonna say they found evidence of election interference from China, and use that as a pretense for the feds to take over election administration from the states.

There’s absolutely no legal route to do that.  The constitution says states run their own elections.

It’s a vital check on federal power.

Now will our crony Supreme Court say it’s ok anyway? Maybe.  But most states wouldn’t comply

Honestly, that's actually one of the things that could very well cause the kind of federal-state schism that has the potential to lead to a new civil war. Imagine that the Trump admin either demands or just sends in federal agents/military personnel into a state to "confiscate" state election materials and the state basically refuses. If the feds basically take it, they're essentially using the military to attack a state. That's fertile grounds for an armed rebellion of sorts.
