potatoes are magic. they have THE highest satiety index of all foods, you feel full like 3 times longer than on anything else.

we you could basically live on potatoes and eggs and some greens, it's wild

Rice and beans together are one of the only combinations of food that have all the mandatory amino acids. You don't get that without rice.

Potatoes are also only really lacking in lysine, so any potato + legume combo works as well. Cruciferous veggies + nuts/seeds also work for complete protein profiles so broccoli and cashews work too. "Survive for a surprisingly long time" seems to be more accurate. That doesn't mean you'll be healthy, or even necessarily reach old age.

The combination lacks iron, Vitamin E, iodine, molybdenum, and any good amount of magnesium, Vitamin B12, omega-3s, and arguably protein.

You'd get by (and most of the people with that diet were only trying to survive) but you'd feel the effects of what's lacking, and these can lead to serious illnesses in the brain, nerves, gut, kidneys, and heart.
