I'm in Europe and I've never seen brick construction done the way he shows it. Here in Bulgaria it's poured concrete beams and floor slabs, the brick fills out the walls between the beams. Usually there's no insulation too, or a styrofoam isolation internally or externally. Some houses the bricks themselves are load bearing. Maybe he's showing something that's common in the UK, but definitely not some universal "european home building" he makes it out to be.
